Bouquet: Crushed lime leaf backed by a delicate fragrance of orange blossom and subtle oyster shell giving a bouquet that is zesty and fresh, yet also of great depth. Palate: The palate is the tight and driven; with great balance, length and poise, true to the Castle Rock Estate style. There is a beautiful complexity and depth to the palate, created by the layering of acids: Lime juice, Granny Smith Apple, Soda Water.
